Chemex
It was already in 1941 when the German chemist Peter J. Schlumbohm invented this cooking device. He combined a laboratory glass funnel and an Erlenmeyer flask, which is still commonly used in laboratories today. In this combination, an air funnel was needed to create space for the air escaping when the water was poured. This funnel is up at the front of the device. To save his hands from the heat, he added a wooden belt to Chemex's waist.

Chemex for 6 cups
Square filter for Chemex
36 grams (5-7 tablespoons) of choice coffee beans
600 ml of water plus additional water for rinsing
Timer
Filling kettle (preferably with a narrow neck, so called gooseneck)

Instructions for preparation
Step 1
Heat the water to 205 degrees by bringing it to a boil and letting it stand for 30 seconds.
Step 2
Unfold the Chemex filter and insert it into the top of the cooker, making sure the 3-layer side of the filter is aligned with the pour spout.
Step 3
Pour hot water around the inside of the filter for approximately 5 seconds. Leave the filter in place and discard the rinse water. Rinsing the filter helps seal it inside the dripper and also gets rid of any paper taste.
Step 4
If you are using pre-ground coffee, skip to step 5. Otherwise, weigh the whole bean, choice coffee to 36g and grind it at a slightly coarser than medium grade.
Step 5
Pour the ground coffee into the filter and gently shake back and forth to settle the sediment.
Step 6
Time: 0:00-0:45
Start the timer and slowly pour enough water onto the soil to evenly soak it (about 70 grams). Let it sit until the timer reads 45 seconds. The hot water forces the coffee to release trapped gases, leading to an expanding coffee bed, bubbling on the surface and wonderful aromas to enjoy.

Time: 0:45-2:45
Start pouring continuously in a spiral pattern.Try to avoid pouring directly into the centre or around the edges of the filter.If the water level is approaching the edge of the Chemex, pause for a moment to allow it to drain before proceeding.Stop pouring when your timer reads 2:45 or your scale reads 600 grams.
Step 8
Time: 2:45-3:30
Allow all the water to drain through the filter. Remove the filter from the drip tray and dispose of the sediment. If your final time was longer than 4:00, your grind was probably too fine. If your final time was less than 3:00, your grind was probably too coarse. The next time you brew, make a small adjustment to the grind - practice makes perfect!
